@DanBeale among other things, the paper says that infants drinking soy milk have ~65-400 times as many estrogen-like isoflavones in their blood compared to infants drinking cow-based milk.

It is clear that you are looking for studies which compare different formulas, but what is the question you are trying to answer / effect you wish to compare? cost? ingredients? overall impact on health or weight gain? corporate ethics?

Disclaimer: I am not a food scientist or health expert. but from first principles. Nitrate is water soluble, so presumably it could be leached out (along with other nutrients) and no3 a -> no2 can be inhibited with vinegar.
